Grown on the east coast of central Japan, Izu matcha leaves are smooth and complex.
The tea is prepared by whisking the powder into a liquid froth in a bowl, then served in small cups. It has gained popularity for its health benefits, because when you drink the whole leaf, you also benefit from all of the anti-oxidants and minerals it contains. It is best brewed with just under boiling (175°F) water and whisked into a heavy green froth which makes it akin to espresso.
